Vegetables are an important component of the dog’s evolutionary diet. Celery supplies vitamins K and A, along with vitamin C, and some of the B complex, such as folate and choline and some important minerals, including potassium, manganese, sodium and calcium. More than a dozen types of phytonutrient antioxidants have been identified in celery, predominantly phenolics, with some flavonoids, which can help protect cells from ageing and damage. Celery contains soluble and insoluble fibre, although not as much as other green leafy vegetables, but it also contains a unique non-starch polysaccharide called ‘apiuman’, which is reported to have anti-inflammatory benefits.
