Pork heart (which is a special type of muscle) is a valuable and very rich and well balanced source of protein, with an excellent amino acid balance, as well as almost all B vitamins, Vitamin C.  It also contains a good mix of minerals including phosphorus, copper, iron, zinc and selenium.  This can be high in fat, especially saturated fat as well as cholesterol.

Pork liver is an excellent source of vitamin A, and needs to be consumed in moderation to prevent overconsumption of this fat-soluble vitamin and toxicity. It also supplies B vitamins especially B12 and riboflavin, as well as vitamin C. Like heart, liver is an excellent source of many minerals including zinc, manganese, selenium, phosphorus, copper and iron. It is a good source of high quality protein and essential fatty acids, but can be high in cholesterol.
